From waste to wellness: why olive seeds may become one of the most valuable hidden treasures of the olive tree

For decades, the olive industry has focused almost exclusively on one product: extra virgin olive oil (EVOO)

The review, authored by Abdel Rahman and colleagues, examined the chemistry, biological activities, health effects, mechanisms of action, and industrial potential of olive seeds (olive pits/kernels) and compared them with the better-known benefits of olive oil itself.
The conclusions are striking.
The olive seed—traditionally considered a low-value by-product or simply a source of biomass energy—contains a unique combination of dietary fiber, healthy lipids, proteins, and bioactive polyphenols that may contribute to human health in ways that are only beginning to be understood.
The forgotten part of the olive
Every year, millions of tonnes of olive by-products are generated by the global olive oil industry. Historically, many of these materials have been viewed as waste streams requiring disposal. Today, however, science is increasingly revealing that these by-products may contain compounds of considerable nutritional, pharmaceutical, and economic value.
Among these by-products, olive seeds deserve special attention.
According to the review, olive seeds contain approximately:
• 45% dietary fiber
• 35% lipids
• 15% protein
In addition, they contain important phytochemicals including hydroxytyrosol, tyrosol, flavonoids, phenolic acids, tocopherols, phytosterols, and monounsaturated fatty acids dominated by oleic acid.
For those familiar with olive oil science, hydroxytyrosol and tyrosol immediately stand out. These phenolic compounds are among the most studied bioactive molecules found in olives and are strongly associated with antioxidant activity and protection against oxidative stress.
The presence of these compounds in olive seeds suggests that the health potential of the olive tree extends far beyond the oil itself.
A powerful antioxidant system
One of the most consistent findings across the studies reviewed is the strong antioxidant activity of olive seed extracts.
Oxidative stress plays a central role in many chronic diseases, including cardiovascular disease, diabetes, neurodegenerative disorders, and age-related decline.
The antioxidant activity observed in olive seeds appears to work through several mechanisms:
